Antioxidant Coatings on Chews: How the Delivery Works

A coating is a thin outer layer applied to a chew after it has been formed and cooled, which lets heat-sensitive ingredients be added without passing through an extrusion oven. On a dental chew it also changes contact order: the coated ingredient meets the mouth first and the gut second. That sequence is most of the reason coatings exist.

Why not just mix the ingredient into the dough?

Because the dough gets cooked. Extrusion runs the mixture through a heated barrel under pressure, commonly somewhere between 120 and 150 degrees Celsius, and a great many functional ingredients do not survive that intact. Carotenoids degrade. Probiotic organisms die. Volatile aromatics evaporate and end up in the exhaust rather than the product.

Formulators do sometimes over-fortify the dough to compensate, adding more than the label claims and accepting the losses. That works for cheap, stable ingredients. It works badly for expensive, fragile ones, where you would be paying for material that becomes a stain on the inside of a machine.

What is a coating, physically?

A carrier plus an active, spread as a film a few tenths of a millimeter thick. The carrier is almost always a fat or an oil, chosen because most of the interesting actives are fat-soluble and because oil wets a starchy surface evenly. Some coatings add a dry powder dusted on after the oil, which sticks to the tacky surface and stays put.

The layer is thinner than people picture. On a typical chew you are looking at a coating that accounts for perhaps 2 to 5 percent of total weight. You can often feel it — a faint slickness — more easily than you can see it.

How is a coating applied?

In a rotating drum, in a sequence that has more in common with candy making than with baking:

  1. Cool the substrate. Chews come off the line warm and must drop below the melting point of the carrier fat, or the coating soaks in instead of staying on.
  2. Tumble. The drum turns slowly enough to keep pieces moving without chipping edges.
  3. Atomize the carrier. Oil is sprayed as a fine mist through nozzles positioned to hit the tumbling curtain of product rather than the drum wall.
  4. Dust the dry fraction, if the formula has one, while the surface is still tacky.
  5. Continue tumbling for a fixed dwell time so distribution evens out across pieces.
  6. Cool and package immediately, usually into light-blocking film, since a coated surface is the exposed surface.

Uniformity is the hard part. Coating variance between individual pieces is a real quality-control metric, and good manufacturers test it rather than assume it.

In the matrix or on the surface: what actually differs?

Neither approach is superior in the abstract. A calcium source belongs in the dough. Astaxanthin does not.

What happens in the first thirty seconds of chewing?

The coating goes first. Saliva and mechanical pressure lift the outer layer almost immediately, which puts the coated material in contact with tooth surfaces, gum margins, and the tongue while the dog is still working on the first bite. Everything in the interior arrives later, and much of it arrives in the stomach rather than the mouth.

For a dental product, that is the whole design argument. An ingredient buried in the center of a chew has a fairly short window to do anything oral before it is swallowed. An ingredient on the outside gets the entire chewing session. This is the same logic behind why contact time matters more than most ingredient panels suggest.

How do you tell whether a coating is still intact?

Look, smell, and check the wrapper. A healthy coating gives a chew a slightly matte sheen and a distinct aroma when the package opens. Degradation announces itself in three ways: color fading toward gray or pale tan, a rancid or cardboard smell from oxidized carrier oil, and a powdery bloom where fat has migrated and recrystallized on the surface.

Storage drives most of this. Heat and light are the enemies, so the pantry beats the car and an opaque resealed bag beats a clip on the original wrapper. What can a coating not do?

It cannot substitute for texture. A chew with an excellent coating and a soft, crumbly body will be gone in twenty seconds and will have accomplished very little mechanically. The coating is a delivery mechanism riding on top of a physical action, and the physical action is the primary event.

It also cannot make a claim true. A dusting of an interesting ingredient does not transform a chew into a treatment for anything, and no amount of formulation cleverness changes that. Your veterinary team is the right group to weigh in on whether a coated chew fits your dog's daily calorie budget and current oral condition, and whether the routine around it needs adjusting.

Do coatings affect palatability, and does that matter?

Yes to both. Coatings are the standard vehicle for palatants in the pet food industry, which is why the same technology shows up on kibble. A fat-based surface layer carries aroma compounds directly to the nose, and dogs decide about food largely by smell before the first bite.

For dental products, palatability is not a frivolous concern. A chew the dog refuses delivers nothing, and a chew the dog is excited about gets chewed thoroughly rather than swallowed in two pieces. Can I tell if a chew is coated just by looking at it?

Usually. Coated chews have a faint surface sheen and a slightly different color than a fresh break would reveal — snap one in half and compare the interior to the outside. A visible contrast means a surface layer. Uniform color throughout suggests everything was mixed into the dough.

Does the coating come off on my hands?

A little, and that is normal for an oil-based layer. What is not normal is a greasy residue that transfers heavily or leaves a stain on packaging. That usually indicates fat migration from heat exposure during storage or shipping, which shortens shelf life even if the chew is still safe to give.

Do coatings wash off if the chew gets wet?

Fat-based coatings resist water reasonably well, which is one reason fat is chosen as the carrier. A chew dropped in a water bowl and retrieved quickly is fine. One that soaks for an hour will lose surface material and soften enough that the texture no longer does its job.

Is a coated chew safe for a dog on a fat-restricted diet?

Ask the practice managing that diet. The absolute quantity of fat in a coating is small, but small is relative to the restriction, and some dogs are on genuinely tight limits. Bring the packaging to the appointment so the numbers can be checked against the day's allowance.

Why do some coated chews cost noticeably more?

Because the coating step adds equipment, dwell time, quality testing, and packaging requirements on top of the ingredient cost. A coated product also usually needs light-blocking individual wrappers, which is a meaningful expense at scale. Whether that premium is worth it depends on what the coating is carrying.
